Dinner!
I tinkered around in the kitchen today and came up with a new recipe for the family and it was a huge hit. It was very simple and it is totally allergy-free for Youngestand Husband. I am very pleased with myself! I'll even share it with you because I'm awesome.
Lemon-Pepper Chicken
(Egg and Dairy free)
1 pkg thin sliced chicken breast
1 1/2 cups all purpose flour
3 tbsp lemon pepper seasoning
1 tsp salt
1/2 tsp cracked black pepper
Mix the flour, salt, pepper, and lemon pepper seasonings together. Dredge the chicken and cover thoroughly. Heat 4 tbsp canola oil and 1 tbsp "safe" butter in a large frying pan. When heated, add chicken and cook, approx 3-4 minutes per side, until nicely browned. Remove from pan and place on a plate with paper towel to absorb any excess oil. Repeat until all pieces of chicken are cooked, adding extra oil and "safe" butter if needed.
I also made a delicious gravy with the little bits and dripings left in the pan.
Add 1 can of reduced fat/low sodium chicken broth to the pan on medium high heat. Stir the broth, making sure to scrape any browned bits off the pan. When broth starts to bubble, add your roux. Reduce heat and stir until sauce has thickened. Taste and season with salt and pepper as needed.
When I served dinner tonight, I placed the chicken on a platter, spooned some of the sauce over all the pieces and sprinkled about one tbsp of parsley over it. All of the chicken was eaten tonight. I seved it with "safe" buttered noodles and broccoli.

Early Dinner
The kids wanted empanadas for dinner tonight. So, they are all made and are baking in the oven as I type. I am making hamburgers for Husband since he really can't eat empanadas due to all his stomach problems. While the burgers were cooking, I was dividing up the packages of meat that I had purchased earlier today. Ground beef I can handle but chicken. Ugh. Just the smell of raw chicken makes me want to heave. Eww. Whenever I go to Home Depot, I buy myself a 100 count box of those latex disposable gloves just so I don't have to handle raw meat. Of course, I ran out of them the other day and I haven't been able to buy another box. I had to sort out chicken wings into smaller portions and actually touch the chicken. ::shudder:: Don't get me wrong - it's damn tasty.
Just don't make me touch it.

Lame Dinner
I whipped up chocolate chip pancakes and bacon for the girls for dinner. P got waffles and bacon. I had better find something delicious for tomorrow night's dinner. Maybe pork chops... mmmm....

Dinner
Tonight I made pork chops, mashed potatoes and broccoli.
I never used to like pork chops, always thought they tasted gamey. Ew. But, P finally convinced me to try them. So, I picked up a package of chops, seared them in a pan then baked them. They tasted delicious! I had my "Green Eggs and Ham" moment after I tasted the chops. P was thrilled as he has been begging me to make pork chops for the longest time.
Are you ready to watch <i>The Sopranos</i> and <i>Deadwood</i> tonight??

Dinner time - soon
Well - rice is cooking and I am making a form of sailsbury steak in meatball form. I am going to toss them (already browned) in gravy and bake them for about 45 minutes. I think the kids and P will like this.
I have a Girl Scout meeting to go to tonight. Luckily, it's a quickie and I won't be there for very long.

Goin' out
I am going out to eat tonight - with three of the women that will be teaching Sunday school with me. At least we are going to a steakhouse that serves alcohol!
P and the girls are having meatloaf, rice and veggies.. Mmmmm!

Dinner time
Wimped out tonight - making meat slop and rice for the family. I have had a killer headache for most of the afternoon. It finally started to fade away about 30 minutes ago.
I have another GS meeting tonight. Luckily, we are holding it at Debbie's house. My living room looks like a couple closets just barfed out their contents all over the floor. Oy. I think I am going to list more stuff on ebay tonight. If anyone is interested in purchasing chocolate molds or cookie cutters, just shoot me an email before I list the stuff.

Mmm.. cinnamon rolls

Mary Carmen's delicious sauce recipe
I got this recipe from <a href="http://www.indierocklibrarian.com/">Mary Carmen</a> - it is SO SO good!
Ingredients:
2 cans of whole tomatos
2 cans of crushed tomatos
1 small onion chopped
5 cloves garlic (I use crushed garlic in a jar - with no oil added to it)
1 bay leaf
Puree both cans of whole tomatos, 1 can at a time. (Remember to keep the empty can so you can pour the puree into it)
In a large pot, pour enough vegetable oil to cover the bottom, like maybe a quarter to half an inch. Heat the oil and sautee the onion for a bit and then add the garlic, let it get brown but not really dark. (translation: DON'T BURN IT). Add the crushed and pureed tomatos
Add 1 bay leaf and as much oregano and parsley as you want. Stir it all in, lower the heat and let the sauce cook for about an hour and a half. Voila! It is done
**for extra flavor, before you sautee your onions and garlic, brown the meat (sausage, etc) then add the garlic and onion and continue.
